If there is any food disappointment we experienced moving to the Xalapa area it has to be the lack of fish - specifically tuna (not the canned stuff - plenty of that) and salmon.

When we visit Mexico (often) on the more westerly side and in the Baja we were treated to lots of fresh fish - yellow tail tuna being one favorite.

Most of the fish available here is from Asia (China, Vietnam etc.). The fish markets and supermarkets all seem to have that selection as well as some fresh Sierra and some shrimp - but no tuna and occasionally some frozen salmon (none currently btw).

I wonder if this is the case further south on the eastern side of Mexico?

I miss thick tuna steaks and Oregon/Washington salmon - tuna is available at Superama much of the time but that is 35 miles round trip from here (am I whining?).

Go to Costco and/or Sams. Sams had vacuum packed and frozen yellowfin loins, except for the last time I was there. Costco buys vacuum packed and frozen steaks, thaws them and then re-packages them. These are pre-cut, but they are a full inch thick, so suitable for the grill. I've made sashimi with it, and it is palatable.

I am of the opinion that these vacuum packed options, especially for tuna, are by far the best option for freshness. There's a decent chance the processing is done right on the boat, and a frozen product is delivered to shore. But this beats the way that Mexican fishermen treat their fish...i.e. no ice.

I always thought that salmon was a cold water fish, is that wrong? While salmon is on the menu in many places I assume it is imported from somewhere cold.

We do have great fresh caught fish here, mostly from the Gulf. I usually get the grouper or snapper, we have wonderful local shrimp too and octopus if you like it. I would think you would get Gulf seafood from the capitol. I wonder why you don't.
